Homemade White Chocolate Lavender Iced Coffee

So far, our summer has been HOT. Like, high 90’s everyday for the past month. It’s totally unusual since we are normally only in the 70’s and maybe low 80’s for most of June, but boy, has it been a doozy! To keep cool, I loooove having iced coffees. Sometimes Jade and I like to take a walk downtown justΒ so I can grab one at my favorite local coffee shop. And, of course, I like getting a little “walking” in, too. However, coffee is just darn expensive. Especially the yummy sweet ones I like to get. It adds up fast after having a few every week! So, I started making my own; and in my opinion, it’s way better than the ones I buy at the coffee shop!

main-picΒ A few summers ago I tried an iced white chocolate lavender latte, and it was to. die for. I never would have thought lavender would go well in coffee, but I assure you, it does. I haven’t been able to find one since, so I just had to attempt my own. It’s amaaaazing, you guys. And, the perfect summer drink to boot!

You won’t even believe how easy this white chocolate lavender iced coffee is to make.

Making-coffeeI first started by brewing a pot of very strong coffee. Alternatively, you could also use your Keurig to brew one cup of coffee instead. Once myΒ pot was brewed, I let cool and chilled it in the refrigerator for a couple of hours. Then, I made a lavender simple syrup.

syrup-collageMix 1 cup water and 1 cup sugar into a small saucepan over med-high heat, stirring until all the sugar is dissolved. Bring to a boil, then take off the heat to let cool.

lavenderOnce the syrup is cooled, pour into a glass jar. Add in 3 drops of lavender essential oil (only ingest essential oils that are safe. I only trust Young Living, as they are 100% pure therapeutic grade oils and are safe to consume.)

Now it’s time to put the coffee all together!

iceAdd ice cubes in a cup/jar.

ingredientsFor the flavoring, I used Torani’s white chocolate sauce that I found at the grocery store, along with my lavender syrup.

w.cAdd in 1 tablespoon of white chocolate sauce, and 1 tablespoon of the homemade lavender simple syrup.

coffeePour in your chilled coffee, leaving an inch or so of room at the top. Stir well with a spoon to make sure the white chocolate is all mixed in.

adding-milkAdd in a splash of milk or cream, and stir well.

Homemade White Chocolate Lavender Iced Coffee

Lavender simple syrup:

  • 1 cup water
  • 1 cup sugar
  • 3 drops Lavender essential oil (this is where I get my 100% pure therapeutic grade oils for 24% off!)

Mix water and sugar in a small saucepan over med-high heat, stirring until just boiling and sugar has dissolved. Remove from heat and let cool.

Brew a strong pot of coffee and chill it in the refrigerator for a few hours.

To make the iced coffee:Β 

  • 1 tbs white chocolate sauce
  • 1 tbs homemade lavender simple syrup
  • Ice
  • Chilled brewed coffee
  • Splash of cream or milk

Add ice to a 16oz glass. Pour white chocolate, lavender simple syrup, and chilled brewed coffee in the glass, leaving an inch of room. Stir well to combine. Add a splash of milk or cream, stir, and enjoy!

yumI think I’ve made this drink everyday for the past week. It’s better than spending money on expensive lattes, right? And, this one tastes way better!

topIn the winter I plan on switching out the lavender for peppermint essential oil, and leaving the coffee hot instead of iced. Um, can we just say yum?

Lavender-closeupNot all essential oils are edible. Due to lack of purity, 98% of essential oils sold should NOT be ingested. An edible essential oil will be labeled β€œtherapeutic-grade” and have a β€œSupplement Facts” box on the label showing the nutritional value – do NOT use just any brand of essential oil for cooking/flavoring foods. Be sure to use pure oils from reliable sources, not synthetic scents or flavorings.

  1. Hi, Amanda ~ This sounds so yummy and refreshing! I have never used lavender in a drink, but I’m definitely game to try it. I love the coffee I get at my favorite coffee shop, but you’re right, it gets expensive! Plus, we live a couple of miles from town, and in the summer when it’s hot, I just don’t have the energy to get in the car for a coffee. I love the idea of making them at home, though!
